
Cranberry Oatmeal Cookies
• 1/8 cup of canola oil• 1 1/2 cups of firmly packed brown sugar• 3 or 4 egg whites• 2 tablespoons skim milk• 2 tablespoons vanilla• 1 3/4 cups of flour• 1 cup raisins• 3/4 teaspoon salt• 1/2 teaspoon baking soda• 1 teaspoon cinnamon• 2 1/4 cups quick rolling oats• 1/4 cup dry oat bran high fiber cereal• 3/4 cup dried cranberries Directions: 1) Preheat oven to 350 degrees. 2) Combine oil and brown sugar in large bowl. 3) Add egg whites, milk, and vanilla. 4) Blend well. Combine flour, salt, baking soda, and cinnamon. 5) Add to oil and brown sugar mixture. 6) Stir in oats, oat bran, and cranberries. 7) Place slightly rounded balls, about 1 tablespoon each, onto lightly greased cookie sheet and bake at 350 degrees for 9-10 minutes or until bottoms are slightly brown. |
