Mexican Holiday Recipes!

Hola chicas!

I love the holidays, and there are so many coming up—like Thanksgiving! Cooking holiday foods with mi familia is really fun and I miss cooking with my grandmother who lives in Mexico City. My grandmother is such a good cook and has given me recipes I can bake at home—Brookline is so far from Mexico City!

Mexicans celebrate Dia de los Muertos, or all souls day, on October 31 until November 2.  It is a very happy holiday to celebrate the life of our familia who are no longer with us.  Food is very important because this holiday is also a feast, kind of like Thanksgiving and Halloween all in one! Normally I celebrate with my entire family, but because they are mostly in Mexico, it is me, mama, Aunt Lourdes, and Elena Maria.

Here are some fun Mexican recipes that I make with mi familia during the holidays—try them out!


Sugar Skulls (for Dia de los Muertos!)


Ingredients

2 egg whites
1 teaspoon of vanilla extract
1 tablespoon of honey
3 cups of white sugar
1 skull shaped mold


Instructions


-Mix together the eggs, honey, and vanilla extract
-Then pour it over the sugar and mix together with your hands
-Put the mixture into the molds
-Let dry for 24 hours then remove from mold
-Paint the skulls with a brush and food coloring



Flan (it’s like pudding!)


Ingredients

1 14 oz. can of sweet condensed milk
1 12 oz. can of evaporated milk
4 oz. of cream cheese (room temperature)
7 eggs
1 teaspoon of vanilla extract
2 cups of sugar


Instructions


-Preheat over to 325 degrees
-Mix all the ingredients in a blender then set aside
-Put the sugar in a big pot and heat on low and stir with a wooden spoon
-Stir until sugar is brown
-Pour into a pie dish
-Pour the other mixture on top and bake for two hours on top of a baking pan
-Put onto a plate and refrigerate for two hours
-Cut and serve like a pie!
